Ingredients

  • 4 lb. baking potatoes
  • 1/4 c. butter
  • 1 Tbsp. minced onion
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. minced parsley
  • 2 Tbsp. grated Parmesan or Romano cheese
  • 1 egg
  • paprika

Instructions

  1. Peel potatoes, cut in halves and cook in boiling, lightly salted water until tender.
  2. Mash slightly.
  3. Place potatoes in large mixer bowl, beat until light and fluffy.
  4. Add 1/4 cup butter, onion, salt, pepper, parsley, cheese and egg.
  5. Whip until well mixed.
  6. Cool.
