Ingredients

  • 1 to 2 cakes dry yeast
  • 1/4 cup water (for dissolving yeast)
  • 1 cup mashed potatoes
  • 1 cup potato water
  • 1 cup sugar
  • 3 eggs
  • 1 1/2 teaspoons salt
  • 3/4 cup shortening

Instructions

  1. Mix the dissolved dry yeast, mashed potatoes, potato water, and sugar together.
  2. Beat the eggs, then add salt and shortening.
  3. Combine the egg mixture with the yeast mixture.
  4. Gradually add flour and knead like bread dough until smooth and elastic.
  5. Place the dough in a greased bowl.
  6. Cover and keep punched down until ready to bake.
  7. Pinch off small pieces of dough and work into balls.
  8. Place the balls on a greased pan close together.
  9. Let rise until doubled in size.
  10. Bake at 400°F (200°C) for 10 to 15 minutes until golden brown.
