Ingredients

  • 3/4 cup chopped onion
  • 1 1/2 tablespoon margarine
  • 1 1/2 tablespoon flour
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper
  • dash of paprika
  • 1 cup milk
  • 1/2 cup grated Cheddar cheese

Instructions

  1. Saute chopped onion in margarine for 5 minutes.
  2. Stir in flour, salt, pepper, and paprika; cook over low heat until smooth.
  3. Remove from heat.
  4. Gradually stir in milk, heating while stirring constantly until the sauce thickens.
  5. Add grated Cheddar cheese to the sauce and mix well.
  6. Layer half of the potatoes in a greased casserole dish.
  7. Cover with half of the cheese sauce.
  8. Repeat layering with remaining potatoes and cheese sauce.
  9. Bake covered at 350°F for 1 hour, then uncover and bake an additional 15 to 30 minutes until golden brown.
