Instructions
- Scrub the potatoes and rub them with oil.
- Prick the potatoes with a fork and bake at 375°F for 1 hour until tender.
- Cool the potatoes slightly.
- Cut the potatoes into halves lengthwise.
- Scoop out the interiors, leaving a thin layer of potato on the skin.
- With scissors, cut the skins lengthwise into strips.
- Brush the insides of the skins with butter.
- Sprinkle the skins with shredded Cheddar cheese, salt, and pepper.
- Place the potato skins on an ovenproof platter.
- Preheat the broiler.
- Slip the skins under the heat until the cheese melts and is bubbly.
