Potato Skin Appetizer

Crispy potato skins loaded with melted Cheddar cheese, perfect as a savory appetizer or snack for gatherings and parties that crave cheesy, crunchy bites.

Ingredients

  • 4 large baking potatoes
  • oil
  • 2 Tbsp. butter or margarine
  • 1/2 cup shredded Cheddar cheese
  • salt
  • pepper

Instructions

  1. Scrub the potatoes and rub them with oil.
  2. Prick the potatoes with a fork and bake at 375°F for 1 hour until tender.
  3. Cool the potatoes slightly.
  4. Cut the potatoes into halves lengthwise.
  5. Scoop out the interiors, leaving a thin layer of potato on the skin.
  6. With scissors, cut the skins lengthwise into strips.
  7. Brush the insides of the skins with butter.
  8. Sprinkle the skins with shredded Cheddar cheese, salt, and pepper.
  9. Place the potato skins on an ovenproof platter.
  10. Preheat the broiler.
  11. Slip the skins under the heat until the cheese melts and is bubbly.
