Ingredients

  • 3 to 4 lb. potatoes, peeled and sliced
  • 3 or 4 carrots, peeled and sliced
  • 2 medium onions, sliced
  • 1/2 lb. bulk sausage, browned and drained
  • 2 Tbsp. butter
  • 4 oz. Velveeta or Cheddar, in chunks
  • water as needed to cover vegetables
  • 1 Tbsp. salt
  • 1 tsp. pepper

Instructions

  1. Put potatoes, carrots, and onions in a large pot with just enough water to cover.
  2. Bring to a boil and cook until vegetables are tender.
  3. Do not drain the water; mash the vegetables in the pot.
  4. Stir in browned sausage, butter, cheese, salt, and pepper.
  5. Simmer a few minutes until the cheese melts and flavors blend.
