Ingredients

  • 4 medium potatoes
  • 1/2 tsp salt
  • 2 Tbsp butter
  • 1/2 Tbsp chopped parsley
  • 1 small onion
  • 2 c milk
  • 1/8 tsp pepper

Instructions

  1. Peel and quarter the potatoes.
  2. Peel and chop the onion finely.
  3. Place the potatoes, onion, and salt in a 2-quart saucepan.
  4. Add water to cover the ingredients.
  5. Bring to a boil and cook for 15 to 20 minutes or until a fork pierces the potatoes easily.
  6. Mash the potatoes and onion in the pan without draining the liquid.
  7. Slowly add the milk, stirring well as you do so.
  8. Add the butter, pepper, and chopped parsley.
  9. Simmer and stir over medium heat until the soup is smooth and hot.
