- Peel and quarter the potatoes.
- Peel and chop the onion finely.
- Place the potatoes, onion, and salt in a 2-quart saucepan.
- Add water to cover the ingredients.
- Bring to a boil and cook for 15 to 20 minutes or until a fork pierces the potatoes easily.
- Mash the potatoes and onion in the pan without draining the liquid.
- Slowly add the milk, stirring well as you do so.
- Add the butter, pepper, and chopped parsley.
- Simmer and stir over medium heat until the soup is smooth and hot.
