Ingredients

  • 8 skinless frankfurters
  • 1 cup finely diced cooked potatoes
  • 1/8 teaspoon pepper
  • 4 slices American cheese
  • 1/2 teaspoon salt
  • 4 slices bacon

Instructions

  1. Preheat oven to 450°F.
  2. Split each frankfurter lengthwise almost through and lap open.
  3. Combine diced cooked potatoes with pepper and salt.
  4. Spoon the potato mixture over the split frankfurters.
  5. Place a slice of American cheese on top of each and add another split frankfurter over the cheese.
  6. Secure the fillings with toothpicks to hold in place.
  7. Wrap a strip of bacon around each stuffed frankfurter.
  8. Bake for 15 to 20 minutes or until the bacon is crisp.
