Ingredients

  • 3 lb potatoes
  • 1/4 c butter
  • mozzarella cheese
  • onions
  • salt (optional)

Instructions

  1. Peel potatoes and boil in salted water until very tender; drain and mash.
  2. Add butter and chopped onions to the mashed potatoes.
  3. Form small potato balls with mozzarella cheese in the center of each.
  4. Flatten each potato/cheese ball to form a flat tortilla shape.
  5. Fry the tortillas until golden brown on each side.
  6. Serve hot, pairing with steak or chicken.
