Ingredients

  • 6 medium potatoes
  • water
  • dash of salt
  • 3 Tbsp. oil
  • 1/2 tsp. salt
  • dash of black pepper
  • 1/2 tsp. dried thyme leaves
  • dash of cayenne pepper
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Scrub unpeeled potatoes well.
  2. Cut each potato in half lengthwise.
  3. Cut each half into even wedges.
  4. Boil potato wedges in salted water for 5 minutes.
  5. Drain and pat dry.
  6. Spread wedges in a single layer on a lightly greased baking sheet.
  7. Sprinkle with 3 tablespoons of oil, 1/2 teaspoon of salt, black pepper, dried thyme leaves, and cayenne pepper.
  8. Bake at 425°F for 15 minutes.
  9. Sprinkle with 1/3 cup grated Parmesan cheese.
  10. Bake at 425°F to 450°F for another 10 to 12 minutes, or until potatoes are golden brown and cheese is melted.
