Ingredients

  • 8 medium potatoes
  • 1 large onion, grated
  • 2 cans cream of chicken soup
  • 10 oz. sharp cheese, grated

Instructions

  1. Parboil peeled potatoes until tender, then let cool.
  2. Slice the cooled potatoes.
  3. In a bowl, season the cream of chicken soup with grated onion, shredded cheese, salt, and pepper.
  4. Place a layer of sliced potatoes in a casserole dish.
  5. Cover with a portion of the soup mixture.
  6. Repeat layering potatoes and soup mixture until all ingredients are used, ending with the soup mixture on top.
  7. Dot the top with butter and sprinkle with grated cheese.
  8. Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
