Ingredients

  • 1/2 cup chopped onion
  • 1 crushed garlic clove
  • 2 tablespoons olive oil
  • 1/4 cup chopped parsley
  • 1/4 cup chopped pimento
  • 1 cup chicken broth
  • 6 medium potatoes, thinly sliced
  • ground black pepper

Instructions

  1. Saute onion and garlic in olive oil until soft.
  2. Stir in parsley, pimento, ground black pepper, and chicken broth.
  3. Remove from heat.
  4. Layer sliced potatoes in broth in a skillet.
  5. Bring to a boil.
  6. Reduce heat, cover, and simmer about 20 minutes until potatoes are soft.
  7. Lift potatoes with a slotted spoon onto a heated serving dish.
  8. Pour the liquid over the potatoes.
