Ingredients

  • 6 medium potatoes
  • 2 cups shredded Cheddar cheese
  • 6 tablespoons butter
  • 1 cup sour cream
  • 3 green onions, minced
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Boil the potatoes in skins until tender, then cool, peel, and shred on a coarse grater.
  2. Combine cheese and 4 tablespoons of butter in a saucepan. Heat and stir until cheese is almost melted.
  3. Remove from heat and blend in sour cream, minced green onions, salt, and pepper.
  4. Fold in the shredded potatoes. Dot with 2 tablespoons of butter.
  5. Cover and bake at 300°F for 25 minutes until heated through and bubbly.
