Ingredients

  • 1/2 lb. bacon
  • 2 c. celery, finely chopped
  • 2 c. onion, finely chopped
  • 2 c. bell pepper, finely chopped
  • 2 (16 oz.) cans stewed tomatoes
  • 4 cans black-eyed peas
  • salt to taste

Instructions

  1. Fry bacon in a skillet; remove, drain, crumble, and set aside.
  2. In a small amount of bacon grease, saute celery, onion, and bell pepper until tender.
  3. Add all stewed tomatoes and cook together for 15 to 20 minutes on low heat.
  4. Add drained and washed black-eyed peas, salt, and pepper, and cook for 10 more minutes on low heat.
  5. Add crumbled bacon just before serving.
