  • 1/2 c. dry white wine
  • 1 c. crushed tomatoes
  • 3/4 c. chicken broth
  • 6 flat fillets anchovies, chopped
  • 24 small green olives, drained and pitted

Instructions

  1. Sprinkle chicken pieces with salt and pepper.
  2. Heat olive oil in a skillet and add chicken pieces, skin side down.
  3. Cook over moderately high heat until golden brown on all sides.
  4. Add mushrooms and continue cooking.
  5. Add bay leaf, thyme, chopped onion, and chopped garlic.
  6. Cook, shaking the skillet often, until ingredients are evenly distributed around the chicken.
  7. When chicken has cooked (10 to 12 minutes), remove pieces to a serving dish.
  8. Sprinkle flour over remaining ingredients in the skillet, stirring to blend evenly.
  9. Add white wine, crushed tomatoes, and chicken broth.
  10. Stir and bring to a boil.
  11. Return chicken to the skillet, add chopped anchovies, salt, and pepper.
  12. Cover and simmer for 5 minutes.
  13. Add olives and cook for another 5 minutes.
  14. Serve over rice, pilaf, or noodles.
