Ingredients

  • 3 to 4 lb. roast
  • salt and pepper
  • 8 oz. bottle Catalina dressing
  • 1/2 cup water
  • 8 small onions
  • 4 medium carrots
  • 4 potatoes
  • 1/2 cup water

Instructions

  1. Season the roast with salt and pepper.
  2. Brown the roast in 1/4 cup of Catalina dressing in a Dutch oven over low heat.
  3. Add the remaining dressing and water; cover and simmer for 2 hours.
  4. Add the small onions, carrots, and potatoes to the pot.
  5. Cover and continue simmering for 1 hour or until the meat and vegetables are tender.
  6. Remove the meat and vegetables from the pot and place on a platter.
  7. Gradually add water to the flour to make a smooth mixture.
  8. Add the flour mixture to the hot liquid in the pan, stirring constantly until it boils and thickens.
  9. Simmer for an additional 3 minutes.
  10. Serve the sliced roast with vegetables and gravy.
