Ingredients

  • 7 lb. watermelon rind
  • 3 lb. granulated sugar
  • 2 c. vinegar
  • 1/2 c. water
  • 1 Tbsp. whole cloves

Instructions

  1. Peel thin green rind from the melon and remove the soft pink meat.
  2. Cut the remaining rind into 2-inch cubes, cover with water, and cook until tender, then drain.
  3. Combine the sugar, vinegar, and 1/2 cup water in a large covered kettle.
  4. Bring to a boil and cook over moderate heat for 10 minutes.
  5. Place the cloves in a spice bag and add to the kettle, then simmer for 1 hour.
  6. Add the cooked melon cubes and simmer gently for 1 1/2 hours, or until the melon is transparent.
  7. Put the rind into sterilized pint jars.
  8. Cover with hot syrup and seal.
