Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons paprika
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons dried parsley
  • 2 green onions (tops included)
  • 1/2 tablespoon garlic salt
  • 12 medium red potatoes in jackets
  • 1 stick oleo (whipped type)

Instructions

  1. Mix mayonnaise, sour cream, paprika, relish, parsley, green onions, and garlic salt in a bowl.
  2. Transfer the mixture to a covered jar and refrigerate for several hours to blend flavors.
  3. Wash and boil the red potatoes until tender.
  4. Place the hot boiled potatoes in a serving dish.
  5. Cut the whipped oleo into pieces and place on top of the hot potatoes.
  6. Pour the mayonnaise mixture over the potatoes and oleo.
  7. Garnish with additional parsley before serving.
