Ingredients

  • 1 lb. pitted prunes
  • 2 c. water (from soaking)
  • 2 c. sugar
  • 4 c. flour
  • 2 tsp. baking soda
  • 2 eggs
  • 3/4 c. oleo
  • 1 tsp. ground cloves
  • 1/2 tsp. ground nutmeg

Instructions

  1. Soak prunes overnight, saving 2 cups of the soaking water for later use.
  2. Cut the soaked prunes into bits and cook them with the reserved water, sugar, and oleo until heated through.
  3. Allow the mixture to cool.
  4. Sift together the flour, salt, ground cloves, ground nutmeg, and baking soda.
  5. Add beaten eggs to the cooled prune mixture.
  6. Gradually add the sifted dry ingredients to the prune mixture, stirring until well combined.
  7. Pour the batter into two greased 5 x 9-inch loaf pans.
  8. Bake at 350°F (175°C) for one hour until a toothpick inserted comes out clean.
