Ingredients

  • 3/4 cup boiling water
  • 1/2 cup cocoa
  • 1 3/4 cups sifted cake flour
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons soda
  • 1 teaspoon salt
  • 1/2 cup salad oil
  • 7 unbeaten egg yolks
  • 2 teaspoons vanilla
  • 1 cup egg whites
  • 1/2 teaspoon cream of tartar

Instructions

  1. Combine boiling water and cocoa; let cool.
  2. Sift together cake flour, sugar, soda, and salt.
  3. Make a well in the dry ingredients; add salad oil, egg yolks, cocoa mixture, and vanilla.
  4. Beat until smooth.
  5. In a large bowl, beat egg whites and cream of tartar until very stiff.
  6. Gradually pour the egg yolk mixture over the beaten whites, gently folding with a rubber scraper until blended.
  7. Pour the batter into an ungreased 10-inch tube pan.
  8. Bake at 325°F (163°C) for 70 minutes.
  9. Invert the pan on a funnel and hang until cool.
