A vibrant and refreshing fruit pudding featuring a mix of canned peaches, pineapple, and oranges combined with creamy vanilla and tapioca puddings, perfect for a light dessert or snack.

Ingredients

  • 1 can sliced peaches
  • 1 can chunked pineapple
  • 1 can mandarin oranges
  • 3 1/2 oz. tapioca pudding mix
  • 3 cups liquid from fruit (or water if needed)
  • 3 1/2 oz. vanilla pudding mix

Instructions

  1. Drain the canned fruit in a bowl and set aside.
  2. In a mixing bowl, stir together the tapioca pudding mix and vanilla pudding mix.
  3. Gradually pour in the drained fruit liquid (adding water if needed) while stirring the pudding mixes.
  4. Microwave the mixture on High until it boils and looks clear, about 6 minutes, stirring 2 or 3 times during cooking.
  5. Allow the pudding to cool.
  6. Add the drained fruit to the cooled pudding and stir gently.
  7. Chill the dessert for a while before serving.
