Ingredients

  • 2 (3 oz.) cans whole green chiles
  • 8 oz. Monterey Jack or Cheddar cheese
  • 1 (10 count) can refrigerated flaky biscuits
  • 3 eggs, separated
  • 1/4 lb. hamburger
  • 1/4 tsp. salt
  • 1 (8 1/4 oz.) jar chunky taco sauce or 1 can Ro-Tel tomatoes

Instructions

  1. Preheat oven to 375°F.
  2. Grease a cookie sheet.
  3. Cut the green chiles lengthwise to make 10 pieces.
  4. Remove seeds and ribs from the chiles.
  5. Cut the cheese into 10 pieces measuring approximately 3 x 1/2 x 1/2 inches.
  6. Wrap each cheese piece with a chile.
  7. Press or roll each biscuit into a 5-inch circle.
  8. Place the chile and cheese on the biscuit and fold over to enclose.
  9. Pinch the ends to seal the biscuit around the filling.
  10. Place seam side up on the prepared cookie sheet.
  11. Bake for 10 to 12 minutes or until light brown.
