Ingredients

  • 8 1/2 oz. corn muffin mix
  • 2 beaten eggs
  • 1 c. sour cream
  • 12 oz. corn with peppers, drained
  • 1 c. shredded Cheddar
  • 1.2 oz. Ranch with bacon dressing mix
  • 1/3 c. melted oleo
  • 16 oz. cream-style corn
  • 4 oz. mushroom pieces, drained

Instructions

  1. Combine the corn muffin mix and ranch with bacon dressing mix in a bowl.
  2. Stir in the beaten eggs, melted oleo, and sour cream until the mixture is moistened.
  3. Add the drained corn with peppers, cream-style corn, and drained mushroom pieces; stir until well combined.
  4. Pour the mixture into a 9-inch baking dish.
  5. Sprinkle the shredded Cheddar cheese evenly over the top.
  6. Bake at 350°F for 50 to 60 minutes until golden and set.
