Creamy, cheesy enchiladas roja with rich tomato sauce, green chilies, olives, and green onions, perfect for a flavorful Mexican-inspired meal loved by friends and family.

Ingredients

  • tortilla, fried
  • 3 Tbsp bacon grease
  • 1 big onion, chopped
  • 2 Tbsp flour
  • 3 cans tomato sauce (13 oz.)
  • 2 tsp chili powder
  • 4 to 5 cloves garlic
  • salt and pepper
  • 2 cans green chilies
  • 1 (8 oz.) pkg Colby cheese
  • 1 can ripe olives
  • green onions

Instructions

  1. Fry the chopped onion in bacon grease until browned.
  2. Add 2 tablespoons of flour to the fried onion and cook briefly.
  3. Pour in the tomato sauce and stir to combine.
  4. Add the remaining ingredients except for the cheese, olives, and green onions to the sauce.
  5. Dip a fried tortilla into the sauce, fill with ripe olives and chopped green onions.
  6. Roll the filled tortilla and place it in a baking dish.
  7. Cover the rolled enchiladas with grated Colby cheese.
  8. Bake at 350°F for 20 minutes until cheese is melted and bubbly.
