Ingredients

  • prepared butterflied fajitas
  • 1 or more containers fresh mushrooms
  • 1 onion, sliced
  • 1/2 bell pepper, sliced
  • 1/2 lb. butter, melted
  • 1 slice bacon for each fajita

Instructions

  1. If butterflied fajitas are not available, cut fajitas into very thin, 5 to 6-inch slices.
  2. Cook mushrooms; set aside.
  3. Sauté bell pepper, onion, and hot pepper in melted butter until tender.
  4. Spoon the onion mixture onto each fajita slice.
  5. Roll up the fajita and wrap one slice of bacon around it, securing with a toothpick.
  6. Place on the grill when coals are ready and cook until well done.
  7. Turn very slowly and in small turns to ensure even cooking.
  8. Fajitas should cook all the way through from one side.
  9. Top with cooked mushrooms and additional butter before serving.
