Ingredients

  • 1 chicken, cut into quarters
  • lite salt and pepper
  • 4 Tbsp margarine or oil
  • 1 cup fresh small whole mushrooms
  • 1 can artichoke hearts (14 oz.)
  • 1 can low-sodium asparagus soup (10 3/4 oz.)
  • 1 cup fat-free sour cream
  • 1/2 cup white wine

Instructions

  1. Rub the chicken pieces with lite salt and pepper, then brown in 4 tablespoons of margarine or oil.
  2. Place the browned chicken in a shallow dish with the small whole mushrooms and drained artichoke hearts.
  3. Mix the low-sodium asparagus soup, fat-free sour cream, and white wine with the chicken drippings, then pour over the chicken and vegetables.
  4. Bake in a 350°F oven for 1 hour and 30 minutes, basting occasionally.
  5. Garnish with chopped parsley before serving.
