Ingredients

  • 1 (3 oz.) package cream cheese
  • 1 cup plus 1 tablespoon half and half milk
  • 1 tablespoon sugar
  • 1 1/2 cups thawed Cool Whip
  • Graham cracker crust
  • 2 packages vanilla pudding mix
  • 1 (16 oz.) can pumpkin
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger

Instructions

  1. Mix cream cheese, 1 tablespoon of half and half, and whipped topping until smooth.
  2. Whip the mixture together until well combined.
  3. Spread this layer on the bottom of the graham cracker crust.
  4. In a separate bowl, pour 1 cup of half and half and add the vanilla pudding mix.
  5. Whisk with a wire whip and let stand for 3 minutes.
  6. Stir in the pumpkin, cinnamon, and ginger.
  7. Spread the pumpkin mixture over the cream cheese layer.
  8. Chill in the refrigerator for 2 hours.
  9. Top with additional whipped topping and nuts if desired before serving.
