Ingredients

  • 2 1/2 cups flour
  • 2 cups sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup canned pumpkin
  • 1/2 cup vegetable oil
  • 2 cups finely chopped apple

Instructions

  1. In a large bowl, combine flour, sugar, pumpkin pie spice, baking soda, and salt.
  2. Add beaten eggs, canned pumpkin, and vegetable oil; stir just until moist.
  3. Stir in the finely chopped apples.
  4. Spoon batter into greased mini muffin tins, filling 3/4 full.
  5. Bake at 350°F (175°C) for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
