Ingredients

  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 3 c. sugar
  • 1 c. cooking oil
  • 4 eggs
  • 1 1/2 tsp. salt
  • 1 can pumpkin
  • 2/3 c. water
  • 2 tsp. baking soda
  • 3 c. flour

Instructions

  1. Beat nutmeg, cinnamon, sugar, oil, eggs, and salt together.
  2. Add pumpkin, water, baking soda, and flour; mix until combined.
  3. Optional: fold in 1 cup of nuts.
  4. Grease and flour 3 coffee cake pans or prepare muffin tins.
  5. Divide batter evenly among pans or muffin cups.
  6. Bake at 350°F (175°C) for 1 to 1 1/4 hours, or until a toothpick inserted in the center comes out clean.
  7. Allow to cool before removing from pans. Can be frozen for later use.
