- Beat nutmeg, cinnamon, sugar, oil, eggs, and salt together.
- Add pumpkin, water, baking soda, and flour; mix until combined.
- Optional: fold in 1 cup of nuts.
- Grease and flour 3 coffee cake pans or prepare muffin tins.
- Divide batter evenly among pans or muffin cups.
- Bake at 350°F (175°C) for 1 to 1 1/4 hours, or until a toothpick inserted in the center comes out clean.
- Allow to cool before removing from pans. Can be frozen for later use.
