Ingredients

  • 1 (1 lb.) can pumpkin
  • 4 eggs
  • 1 tall can evaporated milk
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1 package yellow cake mix
  • 1 cup margarine, melted

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, beat together pumpkin, eggs, evaporated milk, sugar, cinnamon, ginger, and nutmeg.
  3. Pour the mixture into an ungreased 9 x 13-inch pan.
  4. Sprinkle the yellow cake mix evenly over the pumpkin mixture.
  5. Break any lumps in the cake mix to distribute evenly.
  6. Pour melted margarine over the cake mix.
  7. Sprinkle with chopped nuts on top.
  8. Bake for 60 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before serving. May top with whipped cream if desired.
