Ingredients

  • 1 3/4 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup melted butter
  • 8 oz softened cream cheese
  • 2 beaten eggs
  • 3/4 cup sugar
  • 2 (3.4 oz) packages vanilla instant pudding
  • 3/4 cup milk
  • 2 cups pumpkin

Instructions

  1. Combine graham cracker crumbs, sugar, and melted butter; press into a 13 x 9-inch pan. Set aside.
  2. In a bowl, combine softened cream cheese, eggs, and 3/4 cup sugar.
  3. Beat until fluffy.
  4. Spread the cream cheese mixture over the crust.
  5. Bake at 350°F for 20 minutes. Set aside to cool.
  6. In a separate bowl, combine vanilla instant pudding mix and milk.
  7. Beat for 2 minutes at medium speed.
  8. Add pumpkin and cinnamon; mix well.
  9. Stir in 1 cup Cool Whip.
  10. Spread the pudding mixture over the cream cheese layer.
  11. Spread remaining whipped topping over the pudding layer.
  12. Sprinkle the top with pecans.
  13. Store in the refrigerator.
