Ingredients

  • 1 egg
  • water
  • cream cheese
  • pumpkin
  • spice cake mix
  • vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line or grease 24 muffin cups.
  2. In a large mixer bowl, blend cake mix, pumpkin, eggs, vegetable oil, and water until moistened.
  3. Beat on medium speed for 2 minutes.
  4. Pour batter into prepared muffin cups, filling 3/4 full.
  5. Bake for 18 to 23 minutes or until a wooden pick inserted in the center comes out clean.
  6. Cool in pans on wire racks for 10 minutes.
  7. Remove cupcakes from pans and cool completely on wire racks.
  8. Spread cupcakes with frosting and decorate with sprinkles, if desired.
