Ingredients

  • 1/2 cup margarine
  • 1/3 cup sugar
  • 1 cup oats
  • 3/4 cup flour
  • 2 (8 oz) packages cream cheese
  • 1 cup sugar
  • 4 eggs
  • 16 oz can solid pack pumpkin
  • 1/2 cup Karo syrup

Instructions

  1. Heat oven to 350°F.
  2. Grease a 9 x 13-inch baking pan.
  3. Beat margarine and sugar until fluffy.
  4. Add combined oats and flour; mix well.
  5. Spread evenly onto bottom of prepared pan.
  6. Bake for 18 to 20 minutes or until light golden brown.
  7. Cool slightly.
  8. Beat cream cheese and sugar at medium speed until fluffy.
  9. Add eggs, one at a time, beating well after each addition.
  10. Add pumpkin and Karo syrup; mix until smooth.
  11. Pour over partly cooled crust.
  12. Bake an additional 45 to 50 minutes or until center appears set.
  13. Cool completely on a wire rack.
  14. Chill and serve with whipped cream if desired.
