Pumpkin Fruit Bread

Ingredients

  • 2 c. pumpkin
  • 2 c. sugar
  • 2/3 c. butter or margarine
  • 1/2 c. water
  • 3 eggs
  • 2 1/2 c. flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. cloves
  • 2/3 c. chopped dates or raisins
  • 2/3 c. chopped nuts

Instructions

  1. Heat oven to 325°.
  2. Grease (not oil) bottom of two 8 x 4-inch or 9 x 5-inch loaf pans.
  3. In large bowl, combine pumpkin, sugar, butter, water and eggs.
  4. Beat 1 minute at medium speed.
  5. Lightly spoon flour into measuring cup; level off.
  6. Add flour, soda, salt, cinnamon and cloves.
  7. Beat 1 minute at medium speed.
  8. Stir in dates and nuts.
  9. Pour into prepared pans.
  10. Bake at 325° for 50 to 60 minutes until toothpick inserted in center comes out clean.
  11. Cool in pan 5 minutes; remove and cool completely.
  12. Makes 2 loaves.
