Ingredients

  • 1 c. (16 oz.) pumpkin
  • 1 c. (12 oz.) evaporated skim milk
  • 3/4 c. maple syrup
  • 1 egg
  • 2 egg whites
  • 1 Tbsp. unbleached all-purpose flour
  • 2 tsp. ground cinnamon
  • 1 1/4 tsp. ground ginger
  • 1/8 tsp. salt
  • 1/4 c. chopped pecans

Instructions

  1. Preheat the oven to 325°.
  2. Coat a 2 1/2-quart baking dish with nonstick spray.
