A creamy, spicy pumpkin parfait layered with graham cracker and pecan crumble, perfect as a fall dessert or festive treat for pumpkin lovers.

Ingredients

  • 1 1/2 c. graham cracker crumbs
  • 1/2 c. chopped pecans
  • 1/4 c. margarine, melted
  • 1/4 c. sugar
  • 1 qt. vanilla ice cream
  • 1 1/2 c. pumpkin
  • 1/2 c. brown sugar
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/8 tsp. cloves

Instructions

  1. Combine graham cracker crumbs, chopped pecans, melted margarine, and sugar to make the crust mixture.
  2. Press the crust mixture into the bottom of serving glasses or a dish to form the base.
  3. In a separate bowl, mix pumpkin, brown sugar, salt, cinnamon, ginger, and cloves until well combined. Use pumpkin pie spice if preferred.
  4. Layer the pumpkin mixture over the crust in each glass or dish.
  5. Top with scoops of vanilla ice cream.
  6. Optional: Garnish with additional pecans or a sprinkle of cinnamon before serving.
