Ingredients

  • 1 large can (2 lb.) pumpkin
  • 1 cup sugar
  • 1 can Eagle Brand milk
  • 4 teaspoons pumpkin pie spice
  • 4 eggs
  • 1 box yellow cake mix
  • 1 cup nuts
  • 3/4 cup butter or oleo
  • Cool Whip topping

Instructions

  1. Mix together the pumpkin, sugar, Eagle Brand milk, pumpkin pie spice, and eggs.
  2. Pour the mixture into a greased, flat 3-quart Pyrex pan.
  3. Sprinkle the yellow cake mix evenly over the pumpkin mixture, spreading to level the top.
  4. Spread nuts over the cake mix.
  5. Pour melted butter or oleo evenly over the top.
  6. Bake at 350°F (175°C) for 35 minutes, then reduce the temperature to 325°F (160°C) and bake for an additional 20 minutes until evenly browned.
  7. Cool completely.
  8. Cut into squares and serve with Cool Whip topping.
