Quail With Blueberries
Tender quail stuffed with blueberries and fragrant herbs, roasted to perfection with buttery garlic and bay leaves for a delicate, flavorful dish ideal for special occasions.

- Rub each quail generously inside and out with a mixture of oil and lemon juice.
- Season with salt and pepper.
- Stuff each quail with 1/2 cup blueberries and 1/2 teaspoon sugar.
- Close the quails with skewers or thread.
- Place each quail on a square of aluminum foil large enough to fold well.
- Melt butter and add minced garlic and bay leaves to it.
- Pour an equal amount of the butter mixture over each bird.
- Wrap each quail loosely in the foil and fold the edges to seal.
- Roast the quails, breast down, in a 425°F (220°C) oven for 1 hour or until tender.
- Serve with the juices from the foil.
