Quail With Blueberries

Tender quail stuffed with blueberries and fragrant herbs, roasted to perfection with buttery garlic and bay leaves for a delicate, flavorful dish ideal for special occasions.

Ingredients

  • 8 quail
  • oil
  • lemon juice
  • salt
  • pepper
  • 4 cups blueberries
  • 4 teaspoons sugar
  • 8 tablespoons butter
  • 4 cloves garlic

Instructions

  1. Rub each quail generously inside and out with a mixture of oil and lemon juice.
  2. Season with salt and pepper.
  3. Stuff each quail with 1/2 cup blueberries and 1/2 teaspoon sugar.
  4. Close the quails with skewers or thread.
  5. Place each quail on a square of aluminum foil large enough to fold well.
  6. Melt butter and add minced garlic and bay leaves to it.
  7. Pour an equal amount of the butter mixture over each bird.
  8. Wrap each quail loosely in the foil and fold the edges to seal.
  9. Roast the quails, breast down, in a 425°F (220°C) oven for 1 hour or until tender.
  10. Serve with the juices from the foil.
