Creamy queso chicken features tender fried chicken pieces over flavorful rice, topped with melted Velveeta and diced tomatoes, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 eggs
  • 2 Tbsp. water
  • 2 cups flour
  • oil
  • salt
  • pepper
  • 1 1/2 cups cooked rice
  • 1 lb. Velveeta cheese

Instructions

  1. Salt and pepper the chicken pieces, then roll in flour.
  2. Dip the floured chicken in the beaten eggs mixed with water, then coat again in flour.
  3. Fry the coated chicken in hot oil until cooked through; drain on paper towels.
  4. Cook the rice separately until done.
  5. Cube the Velveeta cheese and place in a microwave-safe bowl.
  6. Add the can of Ro-Tel diced tomatoes and green chilies on top of the cheese.
  7. Cover loosely and microwave on high for 5 minutes.
  8. Stir well until the cheese melts completely.
  9. Place the cooked rice in a sprayed casserole dish.
  10. Stir in just enough cheese sauce to moisten the rice.
  11. Arrange the fried chicken pieces over the rice.
  12. Pour additional cheese sauce over the chicken and rice before serving.
