Ingredients

  • 1 (7 oz.) can jalapeno peppers, drained and sliced
  • 5 oz. shredded Cheddar cheese
  • 5 oz. shredded Monterey Jack cheese
  • 6 eggs
  • 2 Tbsp. picante sauce

Instructions

  1. Coat a 9-inch glass pie pan with nonstick spray; sprinkle drained and sliced jalapeno peppers evenly over the bottom of the pan, followed by shredded Cheddar and Monterey Jack cheeses.
  2. Combine eggs and picante sauce in a bowl and pour over the cheese mixture in the pie pan.
  3. Let sit for 10 to 12 minutes to allow flavors to meld.
  4. Bake at 350°F (175°C) for 30 to 35 minutes until set and golden.
