Ingredients

  • 1 package Rice-a-Roni, chicken flavored
  • 2 Tbsp. butter or margarine
  • 1 tsp. dried basil
  • 4 boneless, skinless chicken breast halves
  • 2 c. broccoli flowerets
  • 1 tomato, chopped
  • 1 c. shredded mozzarella cheese

Instructions

  1. Saute rice vermicelli mix with margarine in a large skillet on medium heat until golden brown.
  2. Add 2 cups water, the rice seasoning, and basil.
  3. Bring to a boil on high heat.
  4. Place chicken on top of the rice.
  5. Cover and reduce heat to low.
  6. Simmer for 10 minutes.
  7. Stir in broccoli and chopped tomato.
  8. Cover and simmer for another 10 minutes or until rice is tender and chicken is no longer pink inside.
  9. Sprinkle with shredded mozzarella cheese.
  10. Cover and let stand for 3 minutes before serving.
