Quick And Easy Enchiladas

- Brown the hamburger in a skillet; drain excess fat.
- Add 1/2 cup grated cheese, 1/4 cup salsa, and the can of refried beans to the cooked hamburger; stir and let simmer until the cheese melts.
- Mix 1/4 cup salsa with the enchilada sauce.
- Pour a small amount of the sauce mixture into the bottom of a 9 x 13-inch pan, spreading evenly.
- If needed, prepare an additional 8-inch pan.
- Fill each tortilla with a generous portion of the beef and bean mixture.
- Roll up the filled tortillas and place them seam-side down in the prepared pans.
- Pour the remaining sauce over the rolled tortillas.
- Sprinkle the remaining grated cheese on top.
- Bake in a 350°F oven, covered, for about 30 minutes until the cheese is melted and bubbly.
- Let sit for a few minutes before serving. Cut into squares or serve whole.
