Quick and flavorful enchiladas featuring seasoned beef, cheesy filling, and mild sauce, perfect for a satisfying weeknight dinner for the whole family.

Ingredients

  • 1 lb hamburger
  • 1 (No. 303) can refried beans
  • 1 large can mild enchilada sauce
  • 1/2 cup favorite salsa
  • 1 1/2 cups grated Cheddar and Monterey Jack cheese, mixed
  • 9 to 12 taco size flour tortillas

Instructions

  1. Brown the hamburger in a skillet; drain excess fat.
  2. Add 1/2 cup grated cheese, 1/4 cup salsa, and the can of refried beans to the cooked hamburger; stir and let simmer until the cheese melts.
  3. Mix 1/4 cup salsa with the enchilada sauce.
  4. Pour a small amount of the sauce mixture into the bottom of a 9 x 13-inch pan, spreading evenly.
  5. If needed, prepare an additional 8-inch pan.
  6. Fill each tortilla with a generous portion of the beef and bean mixture.
  7. Roll up the filled tortillas and place them seam-side down in the prepared pans.
  8. Pour the remaining sauce over the rolled tortillas.
  9. Sprinkle the remaining grated cheese on top.
  10. Bake in a 350°F oven, covered, for about 30 minutes until the cheese is melted and bubbly.
  11. Let sit for a few minutes before serving. Cut into squares or serve whole.
