Ingredients

  • 2 Tbsp. olive oil
  • 1 c. chopped mushrooms
  • 1/3 c. sliced green onions
  • 1 c. long grain rice
  • 1 1/2 c. water
  • 1/2 c. dry white wine
  • 3/4 c. Di Giorno shredded Pecorino Romano cheese
  • 1/4 c. half and half or milk

Instructions

  1. Heat olive oil in a saucepan.
  2. Add chopped mushrooms and sliced green onions; cook and stir on medium heat for 5 minutes or until tender.
  3. Stir in the rice, water, and white wine; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  5. Stir in 1/2 cup of the shredded Pecorino Romano cheese and the half and half or milk.
  6. Serve with the remaining cheese sprinkled on top.
