A quick and comforting chicken shortcake featuring flaky biscuits topped with a creamy chicken and mushroom filling, perfect for a hearty family dinner or casual get-together.

Ingredients

  • 1 pkg. buttermilk biscuits (10 biscuits)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1/4 cup milk
  • 1 (3 oz.) can sliced mushrooms, drained
  • 2 cups cubed cooked chicken
  • 1 tablespoon chopped pimento
  • 1/4 cup chopped green onion (optional)

Instructions

  1. Remove biscuits from package and flatten each with your hand to make 3-inch diameter circles.
  2. Place 5 biscuits on a baking sheet and brush with melted butter.
  3. Top each biscuit with another biscuit and press edges together.
  4. Bake in a very hot oven at 475°F for 7 to 8 minutes or until browned.
