Chunky Gazpacho
A refreshing, chunky gazpacho packed with fresh vegetables and bold flavors, perfect for hot days and served cold with seasoned croutons for added crunch.
Ingredients
- 1 (46 oz.) can tomato juice
- 1 clove garlic, pressed
- 1 Tbsp. sugar (heaping) ⓘ
- 1 tsp. salt ⓘ
- 1 tsp. seasoned salt ⓘ
- 1/4 cup olive oil ⓘ
- 3 Tbsp. lemon juice ⓘ
- 1 1/2 tsp. Worcestershire sauce ⓘ
- 1/2 tsp. liquid hot sauce ⓘ
- 1 cucumber, peeled and diced ⓘ
- 1 green pepper, diced ⓘ
- 2 carrots, diced ⓘ
- 3 celery stalks, diced ⓘ
- 3 to 5 green onions, diced ⓘ
Instructions
- In a large mixing bowl, combine tomato juice, pressed garlic, sugar, salt, seasoned salt, olive oil, lemon juice, Worcestershire sauce, and hot sauce.
- Mix until the oil and seasonings are dissolved.
- Pour the mixture into a large refrigerator pitcher.
- Stir in the diced chunky vegetables and add diced fresh tomatoes.
- Chill the gazpacho overnight or for at least 4 hours.
- Serve cold, garnished with seasoned croutons on top.
