Ingredients

  • 3 large or 4 medium egg whites
  • 1 tsp lemon juice
  • 1 c shredded coconut
  • 1/2 c sugar
  • 1/4 tsp cream of tartar
  • 2 tsp all-purpose flour

Instructions

  1. Heat oven to 300°.
  2. Line 12 muffin cups with paper liners.
  3. Put room temperature egg whites in a medium all metal or glass bowl with cream of tartar and beat at high speed until foamy.
  4. Add sugar, 2 tablespoons at a time, beating until whites hold stiff glossy peaks.
  5. Add lemon juice and flour.
  6. Fold in with a spatula until blended.
  7. Fold in coconut.
  8. Spoon into the lined muffin cups.
  9. Bake for 30 to 35 minutes.
  10. Cool on a rack.
  11. As soon as you can, remove them from the pan.
