A flavorful and hearty Mexican-inspired corn bread with ground meat, cheddar, onions, and jalapenos, perfect for family dinners or casual gatherings.

Ingredients

  • 1 small box corn bread mix
  • 1 can cream-style corn
  • 1 lb ground meat
  • 1/2 cup grated Longhorn Cheddar cheese
  • 1/2 cup chopped onion
  • 1 tablespoon chopped jalapeno peppers

Instructions

  1. Make corn bread batter as directed on the package.
  2. Stir in the cream-style corn.
  3. Brown the ground meat in a skillet.
  4. Remove the meat from the skillet, draining well.
  5. Pour half of the batter into the skillet on top of the meat drippings.
  6. Add the cooked meat, grated cheddar cheese, chopped onion, and chopped jalapeno peppers on top of the batter.
  7. Top with the remaining batter.
  8. Bake at 350°F for 1 hour or until done.
