Quick Spinach Casserole

Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 1 small onion, chopped
  • 1 tsp. margarine
  • 2 eggs
  • 1 c. shredded Cheddar cheese
  • 1 (10 oz.) can cream of celery soup
  • 1/2 tsp. thyme
  • 1/4 c. crushed Shredded Wheat

Instructions

  1. Pierce spinach packages.
  2. Thaw in microwave for 2 minutes, using package directions; drain.
  3. Saute onion in 1 teaspoon margarine in skillet or microwave.
  4. Beat eggs in bowl.
  5. Add spinach, onion, cheese, soup and thyme; mix well.
  6. Spoon into 2-quart baking dish.
  7. Sprinkle mixture of cereal and 2 tablespoons margarine around edge of casserole.
  8. Bake at 350°
  9. for 35 minutes.
