Ingredients

  • 6 qt. prepared vegetables
  • 3 cloves garlic
  • 1/4 c. granulated pickling salt
  • cracked ice
  • 5 c. sugar
  • 2 Tbsp. mustard
  • 1 1/2 tsp. celery seed
  • 3 c. vinegar

Instructions

  1. Partially precook vegetables, if desired, by boiling carrots and celery in salt water for a minute or two to ensure clarity of juice.
  2. Spear garlic on a wooden pick for easy removal.
  3. In a large bowl or crock, combine prepared vegetables, garlic, and salt.
  4. Cover with cracked ice and mix thoroughly.
  5. Let stand for 3 hours to allow flavors to develop.
