"Quickie" Pickles

Ingredients

  • 2 Large or 3 Medium Cucumbers
  • 2 Onions
  • 1 tsp. Celery Seed
  • 1 tsp. Turmeric
  • 1 c. Vinegar
  • 1 tsp. White Mustard Seed
  • 2 Tbsp. Salt
  • 1/2 c. Sugar

Instructions

  1. Peel and slice cucumbers and onions.
  2. Sprinkle with salt and cover with ice cubes for 1 hour.
  3. Drain the vegetables.
  4. Add the vegetables to vinegar, sugar, and spices.
  5. Bring the mixture to a boil.
  6. Pour into jars and seal.
  7. May be used in 24 hours.
  8. If the cucumbers are seedy, cut the seeds out and slice in strips lengthwise.
