Ingredients

  • 1 cup flour
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 rabbits, quartered
  • 2 cups celery, diced
  • 3 tablespoons butter
  • 3/4 cup dry red wine
  • 1/2 teaspoon Kitchen Bouquet

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, salt, and pepper in a 10 x 16-inch brown paper bag.
  3. Add rabbit quarters to the bag and shake gently to coat with the flour mixture.
  4. Spread out the coated rabbit quarters in the bottom of the bag.
  5. Add diced celery, butter, and chopped onion (if using) over the rabbit.
  6. Mix dry red wine with Kitchen Bouquet and pour into the bag.
  7. Secure the bag with a twist-tie and make several 1/2-inch slits in the top for steam to escape.
  8. Bake for 1 hour or until the rabbit is tender.
  9. Serve with sauce spooned over the cooked rabbit.
